allergy-friendly easter bark

Spring has sprung, and Easter is around the corner…which means it’s time to make Easter desserts! I love making special holiday treats, and the pastel colors of Easter make for such pretty springtime desserts.

I am personally a huge chocolate fanatic, and have to serve at least one chocolate dessert every holiday. And I usually reach for the Enjoy Life chocolate chunks anytime I need chocolate in a recipe because they’re not only gluten-free, but free of the top 8 allergens.  I truly think they taste just like regular chocolate, and my family actually prefers them to regular chocolate whenever I am baking for everyone.

To make this Easter bark, I used their limited edition individually wrapped holiday squares, and they were perfect. I chose the ricemilk chocolate, but they also come in variety packs with dark chocolates and ricemilk crunch (aka my favorite ones to snack on!) This Easter bark is SO easy and can be changed up depending on what you have lying around your house. And I promise, it will be a hit with everyone – not just people with allergies!

The bark is very simple to make. You really just need to chose what mix-ins you want, and sprinkle them on top of the chocolate once you’ve melted it! I love sweet and salty combos, so I had to add pretzels to mine. I love the Snyder’s gluten-free pretzels, but you could really use whatever kind you like. I also am a huge coconut fan, and coconut reminds me of other Easter desserts, so I chose to add some unsweetened coconut flakes. And it wouldn’t be an Easter dessert without some bright colors, so I added some festive sprinkles. If you don’t have these mix-ins, no worries. You could truly add whatever you’d like to your Easter bark. Nuts and seeds would definitely taste good with this chocolate, or even your favorite cereal.

The Enjoy Life minis come individually wrapped in packs of 18. For this batch of bark, I used two full bags plus a few more squares from the variety packs. There is no exact science to the amount of chocolate you need – you can use less or more depending on how thick you want the bark to turn out.

allergy-friendly Easter bark

This Easter bark is the perfect simple but adorable dessert to make for Spring. It is allergy-friendly, and can be modified based on what ingredients you have lying around your house.

Ingredients

  • 1 cup gluten-free pretzels crushed
  • 15 oz dairy-free chocolate I used Enjoy Life's Ricemilk chocolate minis
  • 1/2 cup unsweetened coconut flakes
  • pastel sprinkles

Instructions

  • Line a small baking sheet with wax paper.
  • Get out all of your bark toppings, and prepare them as necessary (crush up pretzels, etc)
  • Place 3/4 of your chocolate in a microwave safe bowl, and microwave in 30 second intervals until fully melted, stirring often. Be careful not to burn the chocolate.
  • Pour the melted chocolate onto the wax paper and spread into a moderately thin layer.
  • Sprinkle the pretzels and coconut flakes onto the melted chocolate.
  • Melt the other 1/4 of your chocolate with the same technique as before. Drizzle it as a top layer onto your bark.
  • Add the colored sprinkles and any additional toppings.
  • Cover and let set in the freezer for at least 2 hours.
  • After the bark has set, break it up into bite-sized pieces and enjoy! (It should be stored in the fridge or freezer or else the chocolate will likely melt.)
