no-bake butterscotch cookies

Okay guys, I am about to give you the recipe for literally the easiest and fastest cookies ever…and they are so delicious too! These cookies are basically granola cookies covered in butterscotch, with the addition of any mix-ins that you choose.  Personally, I kept it fairly simple, but there are a lot of ways you could adjust this recipe however you like.  For example, you could mix in your choice of nut butter with the butterscotch chips.  You could also replace the butterscotch for dark chocolate or white chocolate if you’re in the mood.  If granola isn’t your thing, mix nuts or plain oats into the bites instead.  Like I said, totally customizable. Below are the bags of butterscotch chips and dark chocolate chips that I chose to use for mine.

There aren’t really many steps to this process. Once you have everything, you basically just mix it all together and toss it on a baking sheet.  I would recommend using two spoons to place it in little balls, because the mixture will be melty and sticky and slightly difficult to handle.

The best part is that once everything is prepped, all you have to do is throw them in the freezer.  15 minutes and you’re done! I would recommend storing them in the fridge once they have completely hardened.  You can keep them in the freezer too, but I would let them sit out before eating because they get pretty solid and might hurt your tooth.  Check out the recipe below and let me know how you guys customize it!

Ingredients

  • 1 bag butterscotch chips
  • 1 cup dark chocolate chips
  • 1/2 cup coconut flakes
  • 1/2 bag granola of your choice

Instructions

  • Melt all of the butterscotch chips in the microwave until they are smooth and creamy.
  • Mix in your choice of granola and coconut flakes. The granola should be thoroughly coated in butterscotch. You can also add in a few chocolate chips to the mixture.
  • Line a baking sheet with parchment paper. Scoop granola into small clusters.
  • Top each cluster with a few dark chocolate chips.
  • Freeze for 15 to 20 minutes. Then enjoy!
